Brown Butter Banana Bread

Nutty brown butter and very ripe bananas make a tender loaf with a crackly sugar top.

Ingredients
- 115 g unsalted butter (1 stick)
- 3 very ripe bananas (about 340 g peeled)
- 150 g light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 225 g all-purpose flour
- 1 tsp baking soda
- 3/4 tsp kosher salt
- 2 tbsp turbinado sugar (for the top)
Method
- Heat the oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment.
- Cook the butter in a small pan over medium heat, swirling, until it smells nutty and the solids turn deep brown. Pour into a large bowl and cool 10 minutes.
- Mash the bananas into the butter, then whisk in the brown sugar, eggs, and vanilla.
- Fold in the flour, baking soda, and salt until just combined.
- Scrape into the pan, sprinkle with turbinado sugar, and bake until a skewer comes out clean, 55 to 65 minutes.
- Cool in the pan 20 minutes, then lift out and cool completely before slicing.
Notes
The bananas should be more black than yellow. If yours aren't there yet, roast them in their skins at 300°F (150°C) for 20 minutes.
